He’s going to amaze us Willy Wonka-style with his interactive presentation, “The Chemistry of Candy.” How does he make those delicious caramels? Do you bake candy at a higher temperature to get holes that whistle? Why do some candies need more air in them? Does changing the temperature change the candy outcome?
