*Blackened Shrimp on a southern corncake with a red pepper coulis
*Braised Pork cheeks with creamed Savoy cabbage
*Beef tips over horseradish mashed potatoes and pink oyster mushrooms with a bourbon demi glaze
*Maple Mascarpone cannoli dipped in caramel and sprinkled with candied bacon
