BRIOCHE FRENCH TOAST CASSEROLE (Nut-free, Sesame-free, Vegetarian) Mother's Day took on a bit of a twist this past year. Since we couldn't have family over or go out to brunch, we moms still deserve a day off of cooking, I have decided to dedicate this Mother's Day recipe to all the awesome moms out there, especially my mom! My mom has passed on a lot to me: her blue eyes, her love of family fun, and the ability to walk the fine line between pure Momma Love and overprotective neuroticism (think Beverly Goldberg without the shoulder pads). Well- she still might come over wearing her 80's jumpsuit with the big white Reebok shoes. I know that I have crossed over to my mom's level of neuroticism when my kids sarcastically start calling me "Bev". My kids love French toast, but let's face it, standing in front of a skillet for 30 minutes making 10 pieces of French toast is not what I envisioned for Mother's Day. That's why I love this recipe, you can prep it in 5-minutes and pop it in the oven. Prep: 5 mins Cook: 40 mins Total time: 45 mins Serves: 8 Ingredients: 6 Brioche Buns (I use S. Rosen's)2 tablespoon melted butter2 cups whole or 2% milk6 eggs1⁄2 cup brown sugar1 tablespoon vanilla Directions: Preheat the oven to 350°FPour melted butter into a 9x13 baking dish and coat well.Slice brioche buns into 1" cubesLayer bread into the greased baking dish.In a medium bowl whisk together milk, eggs, brown sugar, and vanilla, pour evenly over the bread.Bake uncovered for 40-45 minutes, or until a toothpick comes out clean.Remove from the oven and let it sit for 5-10 minutes before serving. Karen Nochimowski, the mom behind MommaChef.com, has loved cooking for as long as she can remember. After friends and family begged to be let in on her culinary secrets, she decided to create a blog featuring the easy, quick recipes that everyone loved. All Momma Chef recipes are made with 6 ingredients or less and take less than 6 minutes of prep time. Karen also started and runs Momma Chef's Soup Kitchen and Momma Chef's Little Free Pantry, which provides food at no cost to those in the Chicago community. Karen's first cookbook, Six Minute Meals, coming November 2022, is a cookbook of 100 simple and delicious recipes with six ingredients or less, including nut-free and allergy-friendly options, to help busy families get dinner on the table with ease.
