Food Medicine - Roots & Shoots
Instructed by: Vicky Shufer
While many plants are sleeping above the ground, beneath the surface roots are growing. As long as the ground is above freezing roots can be dug. Annuals, including chickweed and mustards send up new shoots that can be harvested as well. We will identify some of these roots and their shoots and incorporate them into a nutritional soup.
