4 Teas selected with an appreciation for Taiwanese teas, with modern pastry pairings Faith Barcelo and Iruma Shibuya are teaming up once again for another popup, this time we will be showcasing a selection of Taiwanese teas selected from MEM Tea Import Co. with modern pastry pairings! This is a non-alcoholic & omnivore friendly event. Join us for a chat about Taiwan's rich culture of tea growing & drinking, its fascinating production methods & history. Today, the quality of Taiwan's teas are highly prized along with its nuanced flavor profile and characteristically fragrant aroma. Unfortunately much like the rest of the world, global warming and deforestation are destroying much of Taiwan's tea farms. A once-in-a-lifetime drought in 2020, followed by torrential rainfall in 2021 has devastated tea producers. Throughout this event, we hope to highlight and honor Taiwan's beautiful teas; we hope you enjoy them as much as we do! As per mandate of the Town of Brookline, we will be checking for vaccination cards, and will require masks to be worn while not actively eating or drinking. Chef Faith Barcelo has always been an extremely inquisitive person and can’t remember a time when she wasn’t in the kitchen experimenting while cooking for her many siblings. A world traveler with a background in teaching, Faith explored her love for food while living in seven countries. Since moving to the US and working her way into the professional culinary world, she discovered a love for food science and a natural talent for teaching it. Since 2013, Faith has worked in various food industry establishments from bakeries to fine dining restaurants in California and Massachusetts, learning from award winning chefs and rounding out her knowledge and abilities. Iruma Shibuya was born in Tokyo, Japan, but grew up for the first 8 years of his life in Taipei, Taiwan. Iruma would visit his grandmother's house from time to time in Osaka, Japan, and would be greeted into her home which was a former bar that she had owned and operated. It did not cross Iruma's mind then that he would find his passion in hospitality, but returned to his roots by learning from award winning bartenders and working his way through industry leading cocktail bars in the Greater Boston Area and Tokyo since 2015. Iruma has found his home now with the team at The Emory, a neighborhood bar located on 21 Beacon st. in the former Bellevue Hotel, just a few doors down from the Massachusetts State House.
