So what is it you want to see? You complain about the same old same old but when someone points out there's more happening that you're probably not noticing, more complaining. Hip hop, reggae, punk, other stuff, brings in a crowd believe it or not, as long as it is done well and properly promoted. You probably wouldn't notice if you just stay home all the time and whine on the internet.
It isn't all on the venues. They keep their consistent lineup of safe bands because that works for them and ensures consistent revenue. Those bands are professional and solid musicians. There are people who want to go out and drink and have a fun time and hear classic rock covers. Many of the venue owners are totally down for having different music in their lineups. But historically what I've seen is when an original band plays, if the band doesn't promote it well and doesn't bring in a crowd then the venue has a bad night and they're less likely to offer those slots to other groups outside their comfort zone.
On the Amigo's website it says something like "got an idea for an event? We'll try anything once" and that's a great attitude for the venues to have. If they step outside the box and no one shows up, they're probably not going to invite that act back, because they have to make money every night to pay rent, insurance and payroll. It is the band's job to get the bodies in the door, not the venue's.
Instead of complaining, go out and support the venues when they do something different. Buy drinks, tip the bands, let the venues know you appreciate it.
Even better, start a band, make some rad music, promote the hell out of it, and get some gigs.
