Wine & Cheese Pairing
Europe’s largest mountain range boasts a plethora of treasures — one being the wintertime tradition of après ski. In part because this winddown ritual combines two of our favorite things: wine and cheese. And also because it’s just plain fun. In this class, you'll spend time with cheesemonger and Dedalus Director of Market Operations, Dana Pellicore, and sommelier and Dedalus Director of Education, Brittany Galbraith. We’ll work our way through the Alpine wines of Italy and France, from regions like Piedmont and Trentino Alto Adige to Savoie and the Jura, with a highlight on natural winemakers. We’ll taste cheeses that align both geographically and stylistically with our wines and learn about classic pairings and après ski traditions.
