Hunter's Braised Chicken (Demonstration class)
Chef Alan will begin with a Belgian endive leaves stuffed with candied roasted walnut, mandarin orange and crumbled blue cheese drizzled with a Leaning Ladder Balsamic glaze and garnished with minced chives. Followed by a Citrus salad dressed with a unique citrus tahini vinaigrette using Leaning Ladder Tangerine Balsamic and Lemon Fused Olive Oil. The entrée will feature bone in chicken thighs braised in a porcini mushroom, cremini mushroom, onion, red vermouth, San Marzano tomato, carrot, red wine and fresh herb broth. Served over a Leaning Ladder gourmet pasta. Leave room for dessert Red wine, port, star anise, cinnamon, thyme, vanilla bean and sugar poached pear halves topped with a dollop of whisked mascarpone and sugar then garnished with shaved dark chocolate.
