Chef Green has created a delicious 5-course dinner menu to be paired with your choice of a Bankhead beer or Blackland Distillery cocktail. Drink options will be announced closer to the event date!
Collaboration Dinner Menu: 1st course - Amuse-bouche - Saffron Risotto Salmon Croquet w/ creme fraiche
2nd course - choice of soup or salad - Soup du Jour: Tuxedo Soup - Spicy black bean & white bean duo finished w/ truffle oil and micro greens. The Greens: Poached Pear & Beet Salad - Bourbon poached pear accompanied by candied beets, mixed greens and burrata cheese w/ white balsamic reduction and champagne vinaigrette
3rd course - Pick one from The Farm: Espresso Dusted Fillet - Espresso dusted fillet pan roasted in brown butter and cooked to perfection, accompanied by gratin dauphinois potatoes and haricot verts; finished w/ bourbon brown sugar reduction OR Crab stuffed Veal Chop - Caramelized prime chop stuffed with blue limp crab and slow roasted in pecan brown butter, served w/ garlic butter white infused angel hair pasta & asparagus tips.
4th course - Pick one from The Oceans: Pistachio Crusted Seabass - Pistachio crusted Chilean seabass nestled atop saffron risotto with prosciutto wrapped asparagus and blueberry compote accents OR Rum & Fire Kissed Scallops - U15 scallops in a rum butter cream, lemon zest and high heat seared dressed over cauliflower puree and served with a fried lobster stuffed squash blossom.
5th course - The Pastry Chef: Blueberry Creme Brule Cheesecake w/ fresh berries, blueberry compote and bourbon vanilla Chantilly creme
