Well, there's no magic to it at all. You can make your own feta and mozzarella cheese without much effort at all using simple equipment available in most kitchens. These simple fresh cheeses only have a few steps start to finish. And making your own from local raw milk will always taste better than anything you can buy. Think how impressed your friends will be when you tell them you made the cheese on their salad or pizza yourself? In this class, we'll go through the simple process of making mozzarella and feta from scratch. You'll learn the basic ingredients in these cheeses and where you can get them. We'll also talk a little about why we turn milk into cheese as well as the complicated processes of making some of the aged cheeses we love to eat. Instructor Bio: Dan Durica lives at Dancing Rabbit Ecovillage most of the year and tries to live as self sufficiently as possible. He's been making cheese on a home scale from raw farmstead milk for almost 15 years and has a lot of experience with fresh cheeses like mozzarella and feta. Sweetwater Organic Community Farm was established in 1995 as a nonprofit community-supported urban organic farm and environmental education center in Tampa, Florida. We are located on 6 acres of suburban property along the Sweetwater Creek in Tampa’s Town ‘n’ Country neighborhood, in Hillsborough County, Florida. We operate a Community Supported Agriculture (CSA) Membership program, Sweetwater Sunday Farmers’ Market and Music Series open to the public, educational field trip programs for visiting groups, farm tours, workshops, outdoor movies, seasonal events, volunteer opportunities and more! Through our hands-on programs, visitors of all ages discover the wonders of nature, explore ecological interconnections, practice appropriate land stewardship and master sustainable agriculture techniques. Our farm provides the freshest possible organic vegetables and herbs for hundreds of Tampa Bay residents each year. At Sweetwater, community members come together to grow and enjoy fresh organic food, acquire sustainable living skills, support local agriculture, enjoy nature, make new friends and be a part of the community.
