Knife Sharpening and Pro Cutting Lessons from Executive Chef Joshua Lanning Learn how the pros sharpen their knives from Executive Chef Joshua Lanning; leave with beautifully sharpened knives, your own sharpening stone, and a lesson in professional cutting techniques as a bonus. Bring your basic chef’s knife (no serrated knives, cleavers or extra large knives) in a sheath or wrapped in a towel. Open to ages 18+ unless assisted by an adult. Early in his career, Chef Josh worked in the kitchens of the late, great June in Peoria Heights and The Harvest Café in Delavan. Those stops were bookended by a degree from the prestigious French Culinary Institute in New York and stints at some of the finest restaurants in the world, including Michelin-Starred SingleThread in northern California and Noma in Copenhagen, Denmark, which was once again named The World's Best Restaurant. Lanning most recently worked as the culinary director for award-winning Chef Sean Brock in Nashville, helping build a team, develop the menu and prepare for the openings and operations of three new restaurants. Now he is here to teach us why a well-sharpened knife is so important to a well-prepared dish, how to care for and sharpen our knives, and some bonus cutting skills brought home from his prestigious culinary education and experience at all of the above.
