Tellus3Whiskey Christmas Dinner 21+ Whiskey & Dinner pairing event featuring a four course dinner by Cracked Pepper Catering, where each course is paired with a whiskey. Dinner Menu First Course Burrata - Ricotta stuffed mozzarella w/candied ginger cranberry agrodulce, prosciutto & watercress on house made focaccia Second Course Shaved Celery Root Salad - shaved celeriac, toasted hazelnut vin, pomegranate, radicchio & arugula Third Course Pork Belly - cured and smoked pork roast, stuffed with ginger garlic sausage, gingerbread popcorn streusel, buttered cabbage & maple syrup Fourth Course Sticky Toffee Pudding - macerated date sponge cake, toffee sauce, whipped creme fraiche & brown butter Featured Whiskeys Balvenie 21 Portwood Nose: A perfume of fruity and ripe raisin notes, backed by a nutty dryness. Taste: Refined with remarkable character, it is creamy and silky with fruit, honey and spice notes. Finish: Long, gentle, nutty. Jameson Rarest Vintage Nose: A real full bodied aroma. Initially sweet with ripe fruit notes of melon, bananas and dark fleshy plums. The unmistakable pot still spicy character combines to give hints of treacle, cinnamon and liquorice. Taste: Mellow sweetness and toasted wood are complemented by fruit richness, characteristic of the port casks. A touch of creamy dairy fudge and dark chocolate add to the complexity. Finish: A tantalizingly long finish which covers the spectrum from the sweetness of fruit, through the spices, to the unmistakable note of the barley where it all began. Calumet 15yr Nose: Warm vanilla and oak spice notes accompany dark red fruit compote and caramel sauce. These are all pretty standard as far as Kentucky bourbon goes. Overall the nose is a bit underwhelming but inviting nonetheless. Taste: Fruit-forward flavors of cherries and apricots mingle with peppery spice notes and a hint of mint. Some scorched caramel alongside lady fingers demonstrate the sweeter side that almost gets covered up with a powerful blast of tannins like oak, tobacco leaf and musty leather. Finish: Tannins like oak and leather remain behind as the sip fades away. There’s some dark chocolate with a bit of alkalinity as well. Overall, the finish is only moderately long and somewhat of a letdown for its age. Canadian Club Chronicles 42yr Nose: Nice sweet hard candy lemon and caramel note. A little bit of floral rye, and some peppery spice. In time, an orange citrus comes through. The caramel note is a hard candied caramel melting in one’s mouth. The nose is subtle and welcoming. Taste: Great peppery brown sugar caramel notes come through at first, with a beautiful lemon tart buttery middle palate. The finish is citrus sweet and peppery, with plenty of fatty notes to carry through all that flavor. This is a Canadian whisky, but it finishes like an old scotch.
