This is the El Paso/Las Cruces Alumni Chapter's celebration of the founding of Kappa Alpha Psi Fraternity, Inc. This is the El Paso/Las Cruces Alumni Chapter of Kappa Alpha Psi, Inc. celebration of the founding of our esteemed fraternity in 1911 on the campus of Indiana University. Our guest speaker Patrick Turner, Ph.D., NMSU Associate Provost for Student Success Founder’s Day Celebration Meal Choices Tempaquena Chicken: ??oz Fresh Mesquite Grilled Breast of Chicken Stuffed with Sauteed Onions, and Red & Green Peppers, topped with a Creamy Green Chile Sauce & Cotija Cheese. Served with Spanish Rice and Spicy Black Beans Pecan Crusted Salmon: 6oz. Atlantic Salmon Filet breaded with Pecans, Baked & Drenched with Lemon Parsley Butter. Served with Long Grain Rice and Grilled Asparagus Spears 10oz. Ribeye: Garlic Marinated Grilled Ribeye Steak topped with Brandied Butter Mushrooms.
