We're pairing our favorite cheese mongers with America's first Trappist brewery. The monks at Spencer Abbey have created jams and jellies for over 60 years to raise money for their community of Spencer, Massachusetts. In 2014, The Spencer Abbey monks chose to add brewing to their Heavenly work. After an extensive 2 year journey through Belgium and multiple visits with monks at the historic Trappist breweries (like Westmalle, Chimay and Saint-Sixtus), they finally decided to bring monastic brewing traditions to The US. Ten : One Artisan Cheese chose beautiful cheeses and accoutrements to pair with Spencer's Holiday Ale, a dark, warm and sweet Belgian Dark Strong Ale with hints of spice.
