The beautiful, rocky coastline of Liguria — also known as the Italian Riviera — stretches from the French border in the west to Tuscany in the east. This region is famous for fresh seafood, herbaceous flavors, and it’s where pesto reigns supreme. Food writer and chef-instructor Shawnie Kelley will share the technique for handmaking a popular pasta shape known as trofie. You will use fresh pasta dough to form little corkscrew twists, which is then cooked and tossed with handmade Genoese basil pesto, and topped with tomatoes, green beans and (surprise!) diced potatoes. We pay homage to the region’s holy trinity of ingredients — olive oil, citrus and herbs — with an appetizer of Warm Herbed Olives and pairing the pasta with a winter salad of greens, pear and walnuts. Class ends with a trifle-like dessert of Biscotti Mascarpone Fruit Parfait. After class, enjoy la dolce vita with your meal and a glass of wine.
