Kick off the New Year with three bone-warming soup recipes to get you through the wintry months. Join food writer and chef-instructor Shawnie Kelley as you learn to make a luscious French Three Onion Soup popular in the Alpine regions of France; a crowd-pleasing Chicken Spinach Tortellini Soup; and Tuscan Ribollita, a northern Italian vegetable stew loaded with hearty green, beans, tomatoes and croutons. You will learn the technique for caramelizing onions and developing the deep, beefy broth that French onion soup is famous for. The tortellini soup is both kid-friendly and easy to whip up on a weeknight. Ribollita is vegetarian but tastes meaty with white beans and bread that are added to the stew. At the end of class, everyone can enjoy their soups with a glass of wine.
