Rice & Curries
Aaand I’m back to buying basil at the store…it’s so expensive! The garden is starting to fill with turnips and radishes at least. I’m making extra orders of Matsaman available and a cold weather favorite, mapo tofu, along with some of the familiar dishes. Each order includes a box of rice & serves 2.
Mapo tofu - custardy soft tofu in a spicy minced pork gravy with salty fermented black beans and chile. Will be just assembled so that the tofu isn’t all mushed up when you eat it - heat in the microwave or in a steamer until steamy hot and comforting.
Red curry chicken with pumpkin
Green curry chicken w/ Thai basil & bamboo shoots
Jungle curry chicken - long beans, okra, pumpkin, & holy basil in a very spicy brothy curry
Matsaman curry chicken - Thai Muslim classic, made with all the roots: potatoes, homegrown turnips and radishes, onions, & peanuts, sweet & sour with palm sugar and tamarind
Red curry green beans - my adolescent adaptation of a vegetarian adaptation of jungle curry from a 90s thai cookbook. Not remotely “authentic”, but delicious. Vegetarian - contains soy sauce (soy & gluten)
No delivery is available this week (my car broke down 😞)- labeled bags will be set on the patio for contactless pickup.

Chef Josh Haynes is a native of Birmingham, AL, and in addition to working in some of the best restaurants in Birmingham spent a year studying in Bangkok, Thailand, surrounded by traditional cuisine. In particular, he is inspired by the remnants of Royal cuisine that linger in Bangkok, and the old-fashioned regional dishes of the Kingdom.
