Monday Night Dinner with Red Beans and Rice, Cornbread, and Pork Chop or Smoke Sausage.
In New Orleans when I was as a child, we used to have New Orleans Red Beans and Sausage on Mondays, it was one of the best things during my early childhood. We used to enjoy the red beans as well when cooking on the Monday before Mardi Gras. In 19th century, Monday typically was celebrated with the household as well during cleaning days, and while waiting for everyone to come home, red beans would be cooked and prepared for the family. Dinner was something that did not take a long time on Monday, so red beans and rice would be the great meal that evening. After soaking those beans on Sunday night, it was the perfect meal with onions, bell peppers and celery. In San Antonio, I throw that ham bone in those beans and top with a pork chop or smoke sausage and it takes me back to New Orleans.
