Join food writer and chef instructor Shawnie Kelley as she shares side dishes that are sure to complement a range of main courses as you gather and entertain through the holiday season. Wild rice pilaf with cranberries and pecans makes a colorful side to any protein or can be used as an alternative to stuffing. Learn to make a few classics with a twist — mostly in the form of cheese! A traditional steakhouse-style creamy parmesan spinach is bumped up a notch with the addition of multiple cheeses, garlic and onion, while gratinéed leeks are smothered in gruyere and cream. You will learn the technique for cooking squash as we make baked acorn squash with maple syrup and balsamic glaze. Rosemary hasselback potatoes are a showstopper once you master the technique to cut and fan the potatoes roasted with duck fat and an herbed compound butter. You are going to love cooking your way through this class — and then enjoy all the sides with a glass of wine at the end of class. Mask use: In accordance with federal and local guidance, mask wearing is required for anyone able while indoors at Columbus State Community College events.
