The unit was inspired by central themes from Paul Freedman’s novel “Ten Restaurants that changed America.” Throughout the unit, students explored how American cuisine provides a critical gateway into better understanding our own identities and histories. Students paired up with a restaurant partner and interviewed proprietors, managers, or associates to gain a deeper understanding of the particular restaurant, cuisine, and neighborhood. Students also conducted research in order to understand how the culture of that restaurant is connected to significant historical events. This all brings us here, our pop-up restaurant where students are preparing a dish modeled after the restaurant they selected and serve their dish alongside a table-side presentation, menus, and published magazines.
