Sheetrock ceiling in garage

I have a garage that I need to Sheetrock. Can do everything myself except for ceiling. There is Sheetrock up on the walls right now, but I can take that down because I know most people like to Sheetrock the ceiling first.(only on the walls first for ac install). Labor only. Thanks for looking
