Event Description: Americans eat on average 1 lb. or less per year of eggplant but it is an incredibly delicious, versatile and affordable vegetable. Chef Mauselle will share with us some of her favorite recipes for eggplant including Croquettes, Baba Ganoush and Lamb Stuffed Eggplant.
Cooking has always been a passion for Melissa. She loves how it can bring people together across all differences, including language. She has experience in a variety of cuisines, working across the country. Her main culinary education came early on from working for established chefs in Portland, OR. She has always focussed on healthy, farm to table cuisine, using the ingredients that are available locally.
