Learn to make three iconic French pastries that have a reputation for being difficult but are surprisingly easy to create at home. Choux pastry may sound intimidating, but the dough requires only a few ingredients and opens the door to dozens of variations on the cream puff. Join food writer and chef instructor Shawnie Kelley as she teaches you how to master the perfect consistency for thick, shiny pâte à choux. Class begins with gougères, a light, airy cheese puff laced with gruyère and herbs. These cheesy bites make a perfect accompaniment to wine or a delicious starter for holiday parties. And who doesn’t love a good cream puff? Our profiteroles — the fancy name for cream puffs — will satisfy any sweet tooth. We'll stuff the baked pastry casing with whipped hazelnut filling and drizzle it with chocolate. Last, you will practice piping consistently sized éclair logs and fill them with limoncello cream before dipping the éclairs in chocolate glaze. Shawnie will guide you through the techniques for piping each pastry, proper baking, making and piping the fillings, as well as offering tips and tricks for success at home.
