Green curry chicken - homegrown taro stem, long green chiles, & Thai basil Matsaman curry chicken - potato, onion, peanuts, tangy tamarind spiked Thai Muslim curry Red curry chicken w/homegrown pumpkins, chiles, and Thai basil Jungle curry chicken - mixed vegetables, spicy brothy herbal curry, holy basil Phat phrik khing, aka “dry curry” aka “stirfried curry” aka “PPK”: stirfried pork loin in flavorful curry paste with long beans, peanuts, and lime leaves. Sweet, spicy, salty. Excellent with a Thai fried egg - there are lots of Thai fried egg tutorials on YouTube. The key points are a smoking hot wok, more oil than you think, and courage (maybe a sturdy apron too). Curry curry vegetables (Vegan) - homegrown pumpkin & okra in a coconut cream based curry rich with Thai aromatics and fragrant spices. Chef Josh Haynes is a native of Birmingham, AL, and in addition to working in some of the best restaurants in Birmingham spent a year studying in Bangkok, Thailand, surrounded by traditional cuisine. In particular, he is inspired by the remnants of Royal cuisine that linger in Bangkok, and the old-fashioned regional dishes of the Kingdom.
