It's pronounced "Porketta" and we're finishing it off in "The Cauldron". This is a limited plate dinner.
Known as " Pitchfork Fondue " in some parts of the country, we're going back to humble paleolithic beginnings by combining a big hunk of meat on a stick, fire and a cauldron of boiling oil. It will be one of the best things you have ever eaten.
Porchetta is a savory, fatty, and moist boneless pork roast of Italian culinary tradition. The crazy thing is that it is comprised of a boneless pork loin marinated with lemon, fennel, sage, rosemary and chili flake and then wrapped in a cured skin on slab of pork belly. Roasted for a day and crisped to perfection in the cauldron.
