HOBOKEN, NJ — A Hoboken-based mom and cookie baker has become even more ambitious recently, posting that she is working toward holding the Guinness record for largest gingerbread village — and using Hoboken as her design inspiration. She has posted on various social media pages after creating the hashtag #gingerboken so fans can follow along. And the initiative will eventually help charities, too. "It's happening!" Caroline Henderson first noted a little over a week ago. "I'm building the town I live in. My application has been accepted and now begins the feat to break the @guinnessworldrecords for the world's largest gingerbread village! ... As I say it out loud it seems an impossible feat but at the end of the day we're doing it for charity so even if we don't win, we win. Follow our build! @gingerboken" On Tuesday, she announced a new website for "The Great Gingerboken Build" and said charity information will be posted there soon. Caroline Henderson hails from South Africa and says on her website that she isn't sure where her love of baking comes from, but "Baking is a productive form of self-expression and communication, and at the heart of baking for others, the very act of giving and sharing love. It's my way of connecting with people." She is also the CEO of For Cup Sakes, a specialty cookie company serving New York City. Some of her first structures can be found in the family-friendly coffee shop The Hive in Hoboken, which has also been re-created as a cookie. Follow Caroline's adventures here.
