Amaranthus Grand Chapter Celebrates 100 Years Amaranthus Grand Chapter Order of the Eastern Stars is excited to celebrate 100 years of excellence. Our centennial event “100 Years One Million Stars” will take place at the Marriott Regency on October 23, 2021. Amaranthus Grand Chapter is a nonprofit benevolent organization responsible for awarding hundreds of scholarships to deserving students throughout our community. We are dedicated to severing the city of Omaha through community service ie. serving the homeless, scholarships, annual community picnic, annual children’s Christmas party, back to school drive, visiting nursing homes and the sick and shut in. Guest Speaker Professor Carol T. Mitchell Bio Undergraduate work completed at University of North Texas at Denton, Texas - Masters degree in Chemistry - Southern University at Baton Rouge, Louisiana and Ph.D. in Curriculum and Instruction - University of Nebraska, Lincoln, NE. Has been in the field of education for thirty-nine years: chemistry teacher (15 yrs), science supervisor (8yr), and University instructor, professor (16 yrs.). Awards/Honors: Teaching of Excellence Award (2000); Oxford Rountable Alumnus (2002 and 2009); Traveled to Africa to conduct the first Science Institute and to teach (2005, 2006, 2007). Presented a science workshop for teachers in Haiti and the Dominican Republic in January 2011. Served as Co-Principal Investigator for two major National Science Foundation grants at the Omaha Public Schools and the University of Nebraska Omaha ($ 3.7 million and $4.5 million) over ten years. Served as Co-PI for the NRI Nebraska Teach Grant. Currently serving as the Co-PI for the UNO's Eureka Girl's Inc. Summer Project. This is a five year project.
