Description

We will be working with and eating, this very rare mushroom, Tricholoma Dulciolens. It has a bitter flavor, that reminds me of black coffee. This mushroom was not known to exist in NH, or New England for that matter, until my Nephew found a few 5 years ago. I've since had them DNA sequenced to determine if they are the same species genetically, as collections from Finland. Turns out they are 98% the same, which is typical for species separated by continents. So, there are T. Dulciolens that grow in our state, but to my knowledge the only people to have ever found them is myself and my nephew. They grow in very remote, and very specific locations. The smell of these mushrooms is one of my favorite aromas in the world. Fresh picked the smell is very strong. After refrigeration, the smell dissipates some, but you will still be able to smell it. So, you can be one of only a couple of dozen people in the US, to experience smelling and eating this mushroom. Hope to see you this Friday for a real one of a kind dinner.
