Seattle Startup's Vegan Chicken Nuggets Come To School Lunches

SEATTLE — A Seattle-based startup has been tasked with providing school lunches for up to 125,000 students in California and Washington. As VegNews first reported, Seattle's Rebellyous food has signed a deal to bring its vegan chicken nuggets to six West Coast school districts — the San Ramon, Santa Ana, Livermore, Pleasanton, and Dublin school districts in California, and Everett Public Schools in Washington. While chicken nuggets are a common sight for school cafeterias across the country, vegan options, like Rebellyous' "Kickin' Nuggets", are not. Rebellyous is one of the first food suppliers to bring vegan alternatives to public schools, though Impossible Foods, creators of the Impossible Burger, is reportedly not far behind, and has launched its own "Impossible Chicken Nugget" line with the goal of putting vegan nuggets on school menus. Rebellyous says their Kickin' Nuggets not only have a lower climate impact than meat, but they are lower in sodium and saturated fad than traditional meat-based nuggets. "As school districts across the nation face supply chain shortages, we are proud to be able to offer students nutritious, delicious, plant-based nuggets," Rebellyous Founder Chirstie Lagally told VegNews.
