Say cheese! It's time for our monthly Ciders & Sides Pairing with Truffle Cheese! Let's Get Sauced in September! Cheese on a stick that you can dip in various sauces??! YES! That is what is happening this month for our pairing with Truffle Cheese Shop. Cheese is great on its own and we will encourage you to try each pairing with just the cheese alone, but to turn it up a notch we are including four very different sauces that we think enhance the cheese and cider pairings. Mix and match the sauces to change up the taste even more! So get creative, try everything and get sauced and stick it to September!! A Salted Cucumber Hopped Cider // Brie: is a soft cow's-milk cheese named after Brie, the French region from which it originated (roughly corresponding to the modern département of Seine-et-Marne). It is pale in color with a slight grayish tinge under a rind of white mold. The rind is typically eaten to enhance the flavor of the paste. We LOVE this one with the Raspberry Red Chile Jam! Off Dry Cider // Brigante: is a young sheep's milk cheese from Sardinia. Pinna forms Brigante in basket weave molds to honor the ancient shepherds of Sardinia that made pecorinos by pressing the curds into woven baskets. This small cheese is encased in a beige, inedible rind to stave off mold. Aged for 20-30 days, the ivory interior is springy with small, sparse eyes. It's youth makes it a delicate, mild cheese. A fresh, milky aroma, a mild sheep's milk flavor, and a herbal hint of lemon rounds out this young pecorino. Try this one with the caramel for an interesting desert flavor! Pear Cider // Lou Bergier: This 60 day aged toma is produced with raw Bruna Alpina cow’s milk and thistle flower, a very rare combination in the world of cheese. The name, meaning “small mountain shepherd” in Occitan dialect, pays tribute to Nonna Magno, the grandfather of producer Mario Fiandino. Continuing in his tradition, the Bruna Alpina cows at the Fiandino farm are raised with the utmost care; they even play music at a special frequency to calm the animals and increase milk production. This creamy cheese has a delicate mushroom aroma with flavors of fresh cut grass and milk. Take your pick of sauces with this one - our favorite is the mustard with a drop of honey. Delish! Paloma Cider // Benning Goat Gouda: has a pleasantly mild, fresh taste and pure white color. It is made from light, fresh goat's milk and formed into the classic Gouda-style wheels and aged to give it great taste and a creamy smooth texture. The honey is a classic pairing with this one, the sweetness of the honey is perfect with the mild tanginess of the cheese. We have included a few extra treats to nosh on.... Sopressata is a cured pork hailing from California and is modeled after the classic Italian dry cured salami of the same name. Try it with the mustard and cornichon (just a fancy name for a pickle!) for a salty savory treat! Heidi's Raspberry Red Chile Jam: From Heidi's Raspberry Farm in New Mexico - all organic, all fresh and all delicious! Italian Wildflower Honey: Italian Bees know how to do it. Sweet, sticky and divine. Amora Dijon Mustard: Direct from France, this is the Staple Dijon in every French refrigerator. Goat's Milk Caramel Sauce: Table Mountain Farm in Longmont makes this sweet caramel sauce and we love it on cheese and everything else. The absolute BEST sauce we have found!"
