It is, and you can get some in Palo Alto, made from water buffalo raised right here in Sacramento County at Morsey's Farm in Wilton . And, Corti Brothers in Sacramento has fresh water buffalo mozzarella from the same herd. It's creamier and more luxurious than cheeses made from other sources, and it has 68 percent more calcium and 40 percent more protein than cow's milk, according to the American Water Buffalo Association. It's very popular around the world, but there are only 20 dairies in the US that have Asian water buffalo and only 3 in California, due to strict USDA rules. Of course we have one in the farm to fork capital! I may head out to Corti Brothers and try to snag some of that cheese!
