Marrow Italian Seam Butchery with Butcher Nick
Many people have no clue how a whole animal gets from the pasture to their plate. We practice craft butchery, utilizing the whole animal, updating old-world methods with modern ideals, while still presenting meat in an accessible and approachable way. We look forward to making meat appealing with enthusiastic, approachable, and knowledgeable instructors.
Seam butchery focuses on harvesting entire muscle groupings with the intent of salting and curing them. In this demonstration class we will walk you through the different methods of butchery and curing methods used to achieve old-world products such as prosciutto, coppa, lomo, lardo and a variety of salumi.
Throughout class we will also be tasting some of our favorite products along with a glass of wine.
