“Food as Medicine: The Recipe for a Healthier San Antonio”
San Antonio -- this beautiful city of ours provides a demographic snapshot that reflects the future of our country: a vibrant, diverse culture that is unfortunately facing alarming rates of diet-related chronic disease. Disconnected from real food and without the knowledge, skills, or confidence to prepare nutritious meals for themselves, our children are growing up in a food environment that jeopardizes their long-term health. Recognizing that there is increasing confusion (and often controversy) around what constitutes “good nutrition,” there is, nevertheless, a compelling opportunity to impact the trajectory of our own community’s health and drive a very different future for our city. Thanks to the San Antonio-founded CHEF (Culinary Health Education for Families) program, there is growing evidence that a “back to basics” approach to teaching nutrition and cooking skills to children can inspire and empower entire families to adopt and sustain good eating habits that lead to better lifelong health. Can San Antonio transition from being known as one of the nation’s most unhealthy cities to that of being a role model for the rest of the country? Perhaps the secret ingredient in the Recipe for Life starts with motivating children to cook well, eat well and live well!
