Dig into the abundance of the harvest and how to create culinary creations with ingredients from the land. The culinary talents of Saison and the farming brilliance of 'farmher' Lynsey come together to learn the art of fermentation.
In this interactive and spontaneous class, you will have the opportunity to visit and tour Gracie's Farm and our Three Sisters Garden with culinary creative chefs from Saison and farmer Lynsey, learn how to pick out the best and freshest ingredients to ferment, and explore their favorite pickings from the harvest. We will take into consideration everyone's dietary restrictions and food allergies when choosing the ingredients. After spending about 35 minutes at the farm, the class regroups in the barn to learn the process of fermentation with all the goodies from the field. You will learn the fundamentals of creating delicious and simple dishes with a few fresh and seasonal ingredients.
