This ancient ale fermented with mead (honey wine) is extremely rare and delectable. The recipe is based on an ancient ale that was common in the 13th century in central Switzerland around the founding of the country on the banks of the Vierwaldtstaettensee (the Four Forest States Lake) near Rutli. It can store for ages at cellar temperature (55 degrees F) or in the fridge. Chill and serve cold, then let it warm to cellar temperature and enjoy with rich meats like ribeye, cheeses, or creamy dishes. It is a great accompaniment to a fragrant pipe or cigar by a warm fire, with bloodhounds at your feet and a gun ready for the morning hunt.
