This delta surge is scary, but the garden is still full from all the rains we’ve had - these dishes will be made entirely with homegrown vegetables and basils. Includes rice & serves 2.
Jiin Juwan Curry - inspired by a royal visit to Dutch Indonesia, this curry lies somewhere between matsaman and red curry - fragrant with dried spices, and studded with peanuts, pineapple, and homegrown green peppers
Green curry chicken - homemade curry paste, homegrown baby corn, basil
Jungle curry chicken - the spiciest one. Brothy (no coconut cream), full of mixed vegetables (okra, eggplants, etc) and holy basil.
Matsaman curry - the classic. Potatoes, peanuts, onions.
Red curry green beans - not a true Thai dish, but one of my childhood attempts to recreate Thai food that turned out to be pretty delicious in its own right. Heirloom green beans, red curry, white soy sauce. Vegan.
Chinese sausage salad - caramelized Chinese sausage with cucumbers, tomatoes, shallots, mint, and cilantro, with spicy fish sauce lime dressing. *does not include rice*

Chef Josh Haynes is a native of Birmingham, AL, and in addition to working in some of the best restaurants in Birmingham spent a year studying in Bangkok, Thailand, surrounded by traditional cuisine. In particular, he is inspired by the remnants of Royal cuisine that linger in Bangkok, and the old-fashioned regional dishes of the Kingdom.
