Come in and experience Wilbur’s Total Beverage, voted Brown-Forman’s best retailer in the state of Colorado The Welsh Rabbit their concept was simple: on the shop side, provide cheese and other closely related, complementary products to foodies. On the bistro side, serve great food made from accessible and inexpensive ingredients anchored with a cheese-based menu with charcuterie served sushi-style. The menu is carefully crafted and composed with unique eats: dishes with origins from across the world served by a knowledgeable and engaging staff to create a welcoming, whimsical, warm experience for guests to remember a unique experience. For the playful, sophisticated foodie! The Welsh Rabbit began as a cozy, little cheese shop in Old Town, Fort Collins which eventually developed into a tapas and wine bar, expanding into two separate locations, and along the way creating one of the most inspiring and entrepreneurial stories ever heard: a story that could only come out of Fort Collins. Three commitments guided them: love of family, appreciation of Slow Food, and listening to the community. Out of these emerged The Welsh Rabbit Cheese Shop (one part cheese shop, one part cheese bistro), which opened in Fort Collins' historic downtown in the spring of 2012.
