If you’re on the hunt for flavorful, satisfying vegan recipes, look to Indian cuisine. Dr. Bidisha Nag of Create your Curry will introduce you to some familiar items as well as a relatively new dish prepared with soy. Dishes covered include saffron rice, naan, Tofu Matar Masala (tofu and green peas in a flavorful gravy), Spinach Dal (red lentil soup with spinach), and Aloo Gobi (stir-fried potatoes and cauliflower).
