This summer, join YWAM SF for a series of culinary experiences with Seth Stowaway, owner/chef at Osito. This summer, join us for a series of experiences to cultivate community between housed and unhoused friends. Seth Stowaway, owner/chef at Osito, will be leading a series of sessions to cultivate inspiration and appreciation for the culinary world. Each session is designed for both housed and unhoused friends to experience together, and will culminate in a shared meal. Your ticket will enable one of our unhoused neighbors to participate in the session and explore culinary world as a potential career pathway. Schedule2:00-4:00pm | Cook together 4:00-5:00pm | Eat together 5:00-5:30pm | Debrief Focusing on fruits of the sea, Seth will share about sustainable fishing practices and demo how to butcher a whole fish. Participants will also learn to prepare a dish with summer vegetables. Menu Slow baked local king salmon with sun gold tomatoes, brown whipped corn, and herby yogurtTomato confit and smoked eggplantMassa Organics marinaded brown rice Seth will introduce participants to a local cattle ranch, teach about the different cuts of beef and how to braise beef. The session will include a tasting of various cuts. With fresh bounty from the market, Seth will walk participants through proteins, grains, sauces, textures and flavor combinations to teach participants how to compose a plate of food. About Seth StowawaySeth is the chef/owner of the forthcoming Osito restaurant in the Mission district, San Francisco. Osito will be a 28 seat live fire tasting menu restaurant, with a singular focus for each menu. The name Osito comes from what staff call me in kitchens. It means "little bear," which I think is very endearing, and it references a lot what I’m about stylistically. I was born in Texas and live in the Mission; the story of early America, California —of this land —really speaks to me. Most commonly in the Bay Area you hear “California cuisine” defined as local ingredients with western European technique. That never spoke to me. I grew up in San Antonio, TX, the heart of “Tex -Mex.” There I learned to love cooking outdoors and the celebration of gathering around a meal. I’ve been working in San Francisco for almost fifteen years. I was on the opening team of Bar Agricole under Chef Brandon Jew of Mister Jiu’s, where I currently work as sous chef. I spent four years as executive chef of Bar Agricole Group, running operations at Bar Agricole, Trou Normand and Obispo Rum Bar. As chef of Bar Agricole, I was awarded three stars from the SF Chronicle and remained on the top 100 best restaurants list for every year I was there.Learn more about Osito About YWAM San Francisco YWAM San Francisco is a non-profit organization that seeks to engage the city of San Francisco with a loving God by reaching out to each sphere of society in the city.
