This position is eligible for a $1,000 sign-on bonus. Wediko School is seeking an Experienced FT Lead Cook for it's Windsor, NH campus. The Wediko School Food Service program provides students with three meals per day and snacks 365 days per year, in addition to staff meals during regular working hours and food for special events. The Wediko School Lead Cook is also responsible for ensuring the kitchen and food service areas remain compliant with sanitation and storage requirements. Primary Responsibility includes: Participate in the preparation, service and delivery of healthy, well balanced meals according to the Board of Health Standards and DESE School Lunch and Breakfast program. Assume a leadership role with the overall functioning of the site kitchen. Essential Functions: Monitors food costs. Assists with in-service training on food safety and food allergies to direct care staff, as needed. Responsible for placing food orders with Manager approval. Assists with menu planning and staffing of special events that include food service. Assists with securing health and safety inspections two times a year. Assists with scheduling Wediko kitchen staff to ensure coverage for all shifts. Communicates with Wediko milieu staff and Wediko PD for all kitchen and food service issues as needed. Communicates with Wediko facilities manager for all preventive maintenance and equipment issues, as needed. Participate in the planning of seasonal cycle menus with Home For Little Wanderers' /Wediko Dietitian. Cooks and prepares meals as required. Responsible for stocking and stock rotation. Receives and stores all food in compliance with food safety standards. Maintains a clean and organized kitchen. Coordinates with Wediko housekeeping and maintenance staff to ensure that the environment is in compliance with federal, state and local sanitation and safety regulations. Coordinates the serving of meals with program schedule. Serves or sets meals up for serving. Maintains record keeping as required by Department of Elementary and Secondary Education (ESE) for the school programs ( i.e. HACCP Food Safety logs and Daily Food production records for breakfast and lunch, inventory and purchasing records). Education and Experience: High School Diploma or equivalent required. Two to three years working in a large cooking/kitchen environment preferred. ServSafe certification and, Food Allergy Training required. Skilled cook and ability to follow USDA recipes and prepare meals from a cycle menu. Prior experience working in a residential/institutional kitchen environment preferred. Computer literate, including Microsoft Office and Internet Explorer, with the ability to learn new software applications. Physical Requirements Regular use of hands and fingers to handle tools within the food service trade. Ability to reach and work at kitchen appliances and counters for more then 80% of shift. Ability to easily maneuver around kitchen area. Exposure to heat and cold from stoves and freezers and coolers. Exposure to raw meats and to kitchen cleaning supplies. Frequent lifting and carrying of heavy items.
