Showcasing whole fish cooking over charcoal and wood fire cooking. Based on the Basque technique with our Ecuadorian flair!
The idea for this event came from our time traveling in 2017 where we spent some time in San Sebastian, Spain. At a small famous restaurant on the northern coast of Spain called Elkano, we had the best whole cooked fish in our lives.
We intend to bring you the same feeling we first had while enjoying this feat of culinary excellence. The menu will consist of a whole fish, likely flounder, cooked and broken down. Some light Ecuadorian sides that they serve with fish and the first few to show up will get a dessert as well.
There will not be many extras since fish has very little shelf life, we wont try to keep too much extra.
