Seriously: What's for dinner tonight?

This is neither an invite to dinner, nor a solicitation for a dinner invite. I just get home from work late some evenings and am hungry as heck with no idea on what to make. Money's been tight, too, so I don't care to spend it on takeout/delivery. Anyway, my options are: American (stuffed baked potato/chowder/salad) Italian (either a veggie pizza or a pasta e fagioli like stew) General Mediterranean (shakshuka or hummus/salad/flatbread/briny cheese) West African-like (sweet potatoes/greens/nuts, maybe some pineapple and tomatoes over rice) There's always the Breakfast for Dinner option, too. I've got the makings for pancakes, waffles, an omelet. What sounds good? What are you having? Thanks. Bon appetit!
