This hands -on cooking class begins in Marseilles, famous for its spice and fish markets, as we make Rouleaux de Fromage au Sésame – a North African-inspired, savory cannoli-like spring roll with a saffron-scented syrup. For our main entrée, we travel along the Côte d’azur where Linguine and Seafood en Papillote is found on every menu. In this recipe, shellfish and fin fish are packaged in parchment and cooked in a bright and zingy broth. Dessert of Lemon Chiffon Pie with Gingerbread Crust features two fragrant flavors popular in Menton where citrus reigns supreme. During class, Shawnie discusses culinary traditions and the Italian and African influences on France’s coastal cuisine.
