We need an old-school butcher to come to our ranch and butcher our heritage hogs. We have several hogs, but want to butcher a very large hog and a smaller, young hog. We have a good air-conditioned prep room with stainless steel tables and commercial sinks. We also have a small cooler room where the hog can hang. We are interested in reserving every part of the pig, including the skin and the lard. This means scraping and scalding the pig. We would like for the hog to hang before carving out hams, etc. We are also interested in making sausage. We are a small ministry located on an organic dairy ranch in Seguin. We help to feed a family shelter in Austin with our eggs, meat, and veggies from our ranch. We don't have a lot of money, but we have a big ministry mission!
