with Vincent Carpenter Event Description: In this class we’ll be learning about different flours, types of yeast, mixing techniques, and how to make excellent bread shapes from one dough. We’ll be mixing up lean dough, usually referred to as French Dough. Vinny will show you how to shape a baguette, rolls, other tasty treats. Also, each student will be shape and stipple their own boule loaf. Vincent Carpenter is a native of Miami, Florida and graduated Johnson & Wales University with an Associate Degree in Baking & Pastry, and B.S. in Food Service Mngt. Vincent moved to the Sun Valley area in 2007 and worked for the Rasberrys creating amazing breads and pastries before opening is own business in called Breadwerks in 2011. In 2017 became the General Manager of Ketchum Kitchens, he may not be baking full time, but you can still swing by and ask him questions.
