Joel , calls himself a Christian libertarian environmentalist capitalist lunatic farmer. Others who know him call him the most famous farmer in the world, the high priest of the pasture, and the most eclectic thinker from Virginia since Thomas Jefferson. With a room full of debate trophies from high school and college days, 12 published books, and a thriving multi-generational family farm, he draws on a lifetime of food, farming and fantasy to entertain and inspire audiences around the world. His wide-ranging topics include nitty-gritty how-to for profitable regenerative farming as well as cultural philosophy like orthodoxy vs. heresy. Joel co-owns, with his family, Polyface Farm in Swoope, Virginia. Featured in the New York Times bestseller Omnivore’s Dilemma and award-winning documentary Food Inc., the farm services more than 5,000 families, 50 restaurants, 10 retail outlets, and a farmers’ market with salad bar beef, pig-aerator pork, pastured poultry, and forestry products. When he’s not on the road speaking, he’s at home on the farm, keeping the callouses on his hands and dirt under his fingernails, mentoring young people, inspiring visitors, and promoting local, regenerative food and farming systems. Salatin is the editor of The Stockman Grass Farmer, granddaddy catalyst for the grass farming movement. A frequent guest on radio programs and podcasts targeting preppers, homesteaders, and foodies, Salatin’s practical, can-do solutions tied to passionate soliloquies for sustainability offer everyone food for thought and plans for action. Dr. Mark Cucuzzella, MD is part of the team at West Virginia University's Center for Diabetes & Metabolic Health. Dr. Mark Cucuzzella ("Dr. Mark") and his colleagues have set the bold goal of preventing and reversing diabetes and related metabolic diseases with not MORE medication, but LESS! By combining state-of-the-art medical care with the four pillars of food, exercise, sleep and stress reduction, and an emphasis on community connection, the Center aims to prevent, treat and reverse diabetes and metabolic diseases such as high blood pressure, high blood sugar, excess body fat around the waist and abnormal cholesterol or triglyceride levels that occur together, increasing the risk of heart disease, stroke and diabetes. While there, he led the development and supervised the group’s first Sports Medicine Rehabilitation center. He is a former SEAL, and received his Medical Degree from Bethesda, Uniformed Services University of Health Sciences (USUHS) in 2004. He interned in Obstetrics and Gynecology at Balboa Naval Hospital San Diego in 2005 and subsequently completed a Navy residency in Hyperbarics and Diving Medicine in 2006. Doc has been a member of the American Academy of Sleep Medicine since 2006 and has served as Naval Special Warfare’s expert on Sleep Medicine. In addition, he is certified in hormonal modulation (Age-Management Medicine). Doc lectures worldwide on sleep, wellness, and hormonal optimization. His philosophy for wellness is simple; in order to optimize our health and get the most out of our bodies and minds, we must live more closely to the way we evolved as a species. He believes that many diseases and disorders that we accept as “inevitable” in modern society are unnecessary complications of poor sleeping habits, living in a toxic environment, eating foods we were not designed to digest, and allowing stress to overwhelm us. For more on Doc, go here: https://docparsley.com/about/.Dr. Bill Schindler is the director of the Eastern Shore Food Lab, an Associate Professor of Anthropology and Archaeology at Washington College in Chestertown, Maryland and the co-star of both the National Geographic series, The Great Human Race and Curiosity Stream’s, The Modern Stone Age Family. He is a food archaeologist, primitive technologist and chef. He travels the world documenting traditional food ways and works to draw inspiration from the deep archaeological record, rich ethnographic record and modern culinary world to create food solutions that are relevant, meaningful and accessible. Bill believes that how we acquire, process, store, share and consume food is uniquely human and embedded in practically all aspects of our lives. Learning to eat like humans again is really about learning to live like humans again.
