Come hear Mary Collins speak about her journey eating healthy in her pursuit of healing from an MS diagnosis. Join us LIVE for this interactive discussion with Mary Collins, author of her new memoir, Epiphany: My Story of Healing MS from A to Z. Mary Collins has lived symptom-free post a diagnosis with MS at age 36 in 1995, for over 25 years. The gift of MS changed her focus and put her on her true path to research and then live a life that is centered on nurturing a well self and a vibrant community and planet. For years leading up to the diagnosis she was working long hours, not sleeping well, and disconnected from the healing of great local food and community. In talking with many people with chronic conditions of many kinds she has learned that there are common threads that can be rewoven in healing ways. Mary is the author and voice of the soon to be released print and audio versions of her memoir, Epiphany: My Story of Healing MS from A to Z. She'll be reading from the book, and talking about gut health, and how anti-inflammatory and pro-healing foods can help with so many chronic conditions from minor annoyances to more significant conditions. This will be a fast-paced hour with anti-inflammatory food samples from the garden, including interactive explorations to discover personal epiphanies about your own daily eating and lifestyle habits. You will leave feeling more empowered about how to make easy and delicious changes to enhance your own quality of life. At age 62 she remains well, never having taken medications, no disability, and has focused on being well through foods grown locally on healthy soils, she supports regenerative and local food direct to consumers, the Homegrown National Park concept of 70% native plants and 30% non-natives at their Cary home, and is proud to be the founder of C-FUGE, Cary, NC-Frugal Urban Gardeners for The Environment which focuses on sharing resources and best practices to stewards of our urban environments. She is a grateful customer of Sweet Peas Urban Gardens, TUG box, and Double T Farm CSA all collaborations at Well Fed Garden. What to expect: This discussion will be based around how pivoting to eating healthy can reduce chronic inflammation and support a balanced gut.It will be an interactive discussion with the audience members to discuss health issues and how food is our ultimate medicine. The lecture will introduce the relationship between clean, local produce and meat to a healthy gut microbiome and the implications for health for all of us.There will also be food prepared from freshly harvested Garden produce and eggs.There will be more lectures on Reducing Chronic Inflammation through Healthy Eating with Mary each month, focusing on new topics.
