Swine House's Head Butcher demonstrates butchering and fabricating retail beef cuts from a whole Pure Pastures (Canyon Lake, Tx) cow. Primarily a pork-based operation, Swine House also considers itself a grassfed beef enthusiast, and luckily, there are some amazing pasture-raised beef operators in Texas that can provide the quality and care that they support. Pure Pastures employs a regenerative agriculture model to sustainably raise healthy animals in a way that fundamentally impacts the soil for the better. A whole Red Angus calf, weiging roughly 600 pounds will be delivered to Swine House for steaks, sausages, and burgers just in time for grilling season, and Swine House Head Butcher, Jose Saenz wants to show you how he breaks the whole animal down, and why he thinks grassfed beef is the only beef he will ever support. All General Admission tickets come with cheese and charcuterie plates, access to craft beer from CIbolo Creek Brewing Co., and 2 hours free parking. For more time with the butcher, and the opportunity to take home some of the very beef featured in the class, VIP tickets grant you early entry for a cocktail hour with snacks, and a meat pack to share with others. Included will be a 2 Pork Chops, 2 Sirloin Steaks, 1 pound of house made Sausage, and a pound of Ground Beef. That's over $60 value on just the meat alone!
