Need Help With a Room Makeover

I have a 10 x 8 room that was attached to the house many decades ago as a laundry, water heater, furnace room. Walls and ceilings are all heavy drywall/cement. This morning, part of the ceiling collapsed in. Wood frame and insulation remained intact though. Looking for thoughts on tearing the whole room down and installing a sunroom type room. Or just tearing the inner walls and ceiling down and installing upgraded material around the outer wood frame. Not sure what to do, so asking for help. Need people to come by and take a look at it. Thank you.
