A fundamental part of what inspires us is the history of the "old ways" of cooking. New England is a harsh landscape, and in order to survive, a wealth of knowledge and techniques had to be passed down for generations. . Preservation, foraging, smoking, pickling, curing, whole animal butchery. All these techniques we utilize in our cooking, we have learned from history. And at the center of it all, is fire. . On May 23, join us as we begin our journey from the kitchens and restaurant dining rooms to the farms and fields of New England. Where we will explore the true nature of open fire cooking. We will be honoring this way of cooking with the offerings from our friends at Black Eyed Susan Dairy Farm.
